炊飯器で鯛めしレツピ Snapper Rice Recipe
As most of you already know, I am a huge fan of Japanese cuisine. A home-cooked Japanese dish that I particular enjoy is Tai-meshi (which is translated as Tai Sea Bream Rice).  As it is not easy to buy Tai Sea Bream outside Japan, or too costly for some (since you can only find them at specialised Japanese supermarkets), I adapted and create this rice cooker recipe using Red Snapper fish, which I assure you is equally yummilicious! 

As Tai fish is red in color, the fish also symbolises good luck and is commonly eaten during happy occassions! High in demand in Japan and are referred as 'Matai' (Pagrus Major) which means genuine tai.  

If you have a good rice cooker at home, this easy recipe is a sure winner and fail-proof. Over here I used Panasonic JHF-18 rice cooker. 

This Tai Snapper Rice Recipe will yield you a warm serving of moist red snapper fish with lightly seasoned rice, and crusts of burnt rice that have caramelised along the edges of your rice cooker pot.  It is also a yummy recipe for your bento.

(4 person serving)
- 2 cups of short grain rice
- 1.5 tbsp soy sauce
- 1 tbsp mirin
- 1 tbsp sake
- 1.5 tbsp sugar
- salt 
- 1 Red Snapper fish *you can also used snapper fillets if uncomfortable to use the whole fish
- 5~6 pcs shiitake mushrooms
- spring onions (optional)
- sesame (optional)
(1) Remove the innards of the fish and wash it clean. Rub some salt over the fish to remove the fishy-ness. 
(2) Slice the shiitake mushrooms. Each mushroom should yield you about 3~5 slices. *If you are using dried shiitake mushroom, soak them first to soften them. 
(3) Rinse the rice. Soak it for 30 mins, water level just slightly above the rice. Add a few small pieces of konbu seaweed. 
(4) After 30mins, add soy sauce, sake, sugar, mirin, mushroom slices to the rice mixture. Stir well. *check water amount required for cooking 2 cups of rice, if insufficient, simple top up with water till the required level. 
(5) Place the fish on top of the rice mixture and cook. The cooking settings on my Panasonic rice cooker is as per normal cooking, ie. just like how you would cook your usual white rice
(6) The snapper rice should be cooked under 1 hour.
(7) Remove the cooked snapper fish from the rice cooker. 
(8) Debone the fish. *Be careful of small bones, make sure you remove them thoroughly.
(9) Add the fish meat back to the cooked rice
(10) Dice the spring onion. Garnish the rice with spring onions and sesame. *Optional - you can skip this if you don't like spring onions and/or sesame.

FUN FACT~~
Some of you might know of the Japanese snack - Taiyaki? Baked sea bream pancakes that has fillings inside, such as sweetened bean, custard etc. 
That fish! is Tai Sea Bream fish ;) or at least it is shaped as the fish I mean :P
